Our first offering from two Lord Voldemort lots. Deiro Garcia is a big fan of the Harry Potter series so he named his farm after the character. Deiro is a true agricultural specialist, experimenting with his own grown yeast strains for his fermentations and this will show in the cup. Expect juicy sweet red fruits, fermented dark chocolate and a syrupy sweet aftertaste. It shouldn't be drunk by fainthearted muggles.
Deiro Garcia is one of the most innovative growers in Huila, he has a farm in Pitalito (Huila), and since he is a great fan of Harry Potter, he gave it a name that it will sure surprise you, Lord Voldemort, not only is the name crazy, but also his approach to coffee fermentation
Deiro has been working with coffee processing for more than 3 years, he has done several tests with outstanding outcomes and has established a standard processing for the coffee on his farm. In the microbiology course taken, he learnt that certain bacteria and yeast strains can help produce distinct coffee profiles, therefore he decided to reproduce his own bacteria and yeasts using home-made ferments from different fruits and vegetables.
The process begins with a good selection of the ripe fruits of the coffee tree, after which floats are carried out to eliminate impurities and dirt acquired during harvesting, and immediately after the float is finished, the fermentation phase is carried out anaerobically in bags or baskets for 144 hours. After this time, fermentation is broken, the coffee enters the drying room for 15 to 18 days.
