At Rodolfo’s farm they have honored the legacy of Mr. Portillo by continuing to push the evolution of this varietal, selecting seeds from the highest cupping trees to ensure both the best cups and the strongest crops. Now in its 4th generation, these trees have come to be known as the “Portillo FES” line. From this lineage they have passed on seeds to the Coffee School Project in hopes of spotlighting a resilient local varietal, supporting other farmers and the region’s heritage.
After harvest, these beans underwent 48 hours of cherry maceration in low oxygen conditions, after which they were dried on raised beds. Altogether this leads to a funky coffee that we find is rich in tropical fruits and milk chocolate.
