Over deze koffie
Meet First Light, our new washed Ethiopian Guji.
Bright, clean and full of lift, this is the kind of coffee that makes the first cup of the day feel like a small reset. Grown around Shakiso in Ethiopia’s Guji region and processed at Guji Hadeso washing station, First Light brings the classic washed Ethiopia profile we love: citrus sparkle, delicate florals and a tea-like finish.
This lot is all about clarity. Expect juicy tangerine acidity, soft berry sweetness and a crisp black tea structure, with a floral aroma that keeps the cup bright and crisp. It is roasted for filter, so it shines as a V60, batch brew, AeroPress or French press when you want something bright, sweet and refreshing.
Ripe cherry is selectively hand-picked by smallholder farmers and delivered to Guji Hadeso. At the station, cherry is sorted, pulped within hours of harvest, fermented in tanks for 36 to 48 hours, then thoroughly washed and graded in channels. The parchment is dried on raised beds under shade for 5 to 7 days, with regular turning and hand-sorting to keep the cup clean and consistent.
Guji sits in southern Ethiopia and is known for coffees that are distinct from neighbouring Yirgacheffe and Sidamo, thanks to its local landraces, altitude and microclimates. This Grade 1 lot is produced by around 500 smallholder farmers, most working traditional small farms with coffee intercropped alongside food crops.
Chef's notes: “First Light is bright without being sharp, juicy without being loud. Think tangerine, florals and sweet tea. Clean Ethiopian filter making you always sippin' that mug.”
