The combination of fertile soil and high elevations allows the cherries to ripen slowly, developing remarkable sweetness and complexity. The natural process, enhanced with carefully selected yeast inoculation, intensifies the coffee's fruit-forward character while bringing extra clarity and depth to every cup.
