The Sugarcane process has emerged as a novel technique, prompting intrigue and raising doubts about its true nature as a decaffeinated option. This innovative approach harnesses ethyl acetate (EA), a naturally occurring by-product derived from sugar production (molasses). The process is simple and and follows these steps:

The coffee beans are moistened with water and EA is circulated throughout.

During this process, ethyl acetate interacts with the caffeine within the coffee bean, extracting the caffeine while preserving the majority of the flavour compounds.

Once the desired caffeine level is achieved, the beans undergo a steaming process to eliminate any remaining residue of ethyl acetate.

Natural EA is obtained from the sugar cane industry around Palmira, Colombia and is, together with spring water, the only other substance the coffee gets in contact with.
