About this coffee
Finca Las Flores began in 1990 as a family project by Edilberto Vergara and Nubia Ayure, growing from two hectares into a 16 hectare farm focused on quality and innovation. After Nubia placed 16th in the 2006 Cup of Excellence, the family committed fully producing some outrageously tasty coffees.
Jhoan Vergara later expanded the farm’s vision, introducing new varieties and refining processing alongside his brothers, with Carlos and Diego focusing on fermentation and drying while Jhoan led experimentation and outreach. In 2019, he won 1st place in the Master of Coffee competition, bringing international recognition to the farm.
Washed Oxidation process:
This lot is part of an experimental series focused on pushing fermentation boundaries.
Method: Washed
Fermentation: • 24 hours oxidation in cherry • Pulping • 60 hours fermentation in cherry • Thermal shock washing at 55°C
Drying: • 50 hours in dehumidifying machines
Controlled fermentation environments during both washing and drying stages allow for precision flavour development and clarity.
