More about the CO2-decaffeination process

During what is called the CO2 process, similar to in carbonated beverages, CO2 is used to absorb caffeine from the beans. The CO2 selectively absorbs caffeine from the beans and then is expelled from the vat into a condenser. There it is condensed and re-condensed so that the caffeine precipitates out of the beans while the CO2 can be added back to the coffee. This process is repeated until the caffeine content in the coffee is less than 0.01%. The beauty of the CO2 process is that carbon dioxide is a completely natural chemical substance. It is everywhere and we consume it every day, found in carbonated water and air we breathe. In contrast to other processes where substances like methylencidine are used, this leaves no harmful substances behind. The CO2 process also only removes caffeine from the coffee beans, thus preserving all the good components. This means that the taste and aromatic compounds remain exactly where they belong: in the bean.
